THE GENTIAN HARVEST HAS BEGUN!
A LITTLE HISTORY
In 1885, distiller Alfred Labounoux was inspired to create an original aperitif liqueur. He chose to use Auvergne yellow gentian, harvested on the slopes of Puy Mary, near the village of Salers. It was a great success, and Salers became a must-have throughout the Auvergne and Limousin regions.
It wasn’t until the interwar period that Salers began to conquer the capital, thanks to the arrival of Corréziens and Auvergnats in Paris. Warehouses were set up in La Garenne-Colombe, then in Puteaux.
In 2006, the Salers distillery joined the VEDRENNE family group. Today, Salers is produced in Turenne, near Brive-la-Gaillarde.
THE HARVEST HAS BEGUN

The harvesting of yellow gentian (Gentiana Lutea) has begun, and it’s all about patience and respect for nature. The yellow fairy only flowers every two years, and takes around twenty years to reach adult size.
What is the Gentian Lutea used to make Salers cheese?
Gentian lutea is a large, robust, perennial herb that can live up to 50 years, growing up to 2 m tall and 60 cm wide. Harvested in the Massif Central, it is sometimes confused with white gentian, whose roots are highly toxic to humans and animals.
A REASONED APPROACH
Only the roots of Yellow Gentian are used in Salers. The roots are extracted exclusively by hand by the farmers who collaborate with the distillery, out of respect for the surrounding flora, pastures and local ecosystem.

Ingredients
4 cl Ziane SALERS 100cl
10 cl tonic
1 cucumber slice
Preparation
Mix directly in a tumbler.
Add the cucumber slice directly to the cocktail.


FRESH WATER
Ingredients
1.5 cl VEDRENNE Yellow Peach Syrup 100cl
1.5 cl SALERS Gin 70cl – 40% Liqueur de Gentiane
2 cl Liqueur de Gentiane SALERS 100 cl – 16% (gentian liqueur)
8 cl tonic
1 cucumber slice
Preparation
Pour directly into a large wine glass.
Garnish with a slice of cucumber.
